Healthy snacks for a happy mind

Peachy is for sure not a food blog and I’m by no mean a food expert. But what I noticed since I changed my lifestyle is that healthy food really affects my mind. When I eat good, I feel better. When I work out, I feel better. Healthy food improves my mood, gives me energy and helps me think more clearly. For me, this is the most important reason to eat healthy. There are tons of What I Eat In A Day videos on YouTube where you can get a lot of recipe inspiration from. So if you want to some inspiration for healthy meals, I highly suggest you search for recipes there.


As a snack I prefer to eat fruit. But sometimes I’m in the mood for something else… That’s when I make one of these recipes:


Corn cake with peanut butter and cacao nibs

This is the easiest recipe ever! Put some peanut butter and cacao nibs on a corn cake and your easy and healthy snack is servered!

Berrie energy balls

I love energy balls! They are so filling and easy to take with you on the go. For this recipe you’ll need:
1 cup (100 g) mixed berries (I use frozen raspberries and blue berries)
¾ cup (80 g) oats
¼ cup (35 g) coconut flour*
(20g) coconut flakes
1 Tbsp coconut oil
1 pinch of salt
¼ cup (40 ml) maple or agave syrup**

Just mix all the ingredients in a food prosessor or with a (hand) blender and roll balls out of the mixture. So good!!

Nice cream

This is the best healthy ice cream you will ever have! And guess what?! You only need some frozen bananas, other frozen fruit of your choice and a splash of plant based milk. I usually blend one or two frozen bananas with a handful of frozen mangos. Top it off with anything you like, I prefer coconut flakes, granola, chia seeds and more fruit for some extra flavor. Enjoy! I also love making this recipe for breakfast, especially in summer. So refreshing!
